- if cooked for the full time the vegetables will be extremely soft. for a little firmer veggies add them about three hours after starting to roast cooking. but follow the rest of the directions. if you don't have a large crock pot you can always use a very large stew pot same effect just but on low heat and simmer and add a few cups more of water
