Mango and puffed rice rice combination is a perfect and mouthwatering snack. My grandparents always have aam raas and mudhi in this season, so I have tried to twist a little in this recipe, by making it sweet and sour pancake along with mudhi or Murmura or puffed rice. It is extremely good and tasty. Must try at home.

  2. 2 cup Puffed rice
  3. 1/4 cup jaggery
  4. 1/2 cup water
  5. 1 tsp mango essence
  6. 1 tsp chopped green chilli
  7. 1 tbsp butter
  8. For sauce:-
  9. 1 raw mango slices
  10. 1/2 cup mango puree
  11. 3 tbs sugar
  12. 1 pinch Salt
  13. 1 tbsp coriander leaves
  14. 1 tsp chopped green chilli
  15. For pancake:-
  16. 1 cup wheat flour
  17. 1 cup mango puree
  18. 1/2 tsp Salt
  19. 2 tbsp Sugar
  20. 1/2 tsp cinnamon powder
  21. 1/2 cup milk if required for batter
  22. 1 cup mango cubes
  23. 8 cashew nuts
  24. 8 raisens
  25. 2 tbsp oil
  26. For garnish:-
  27. 1/2 cup Chopped mango
  28. 8 Cherry

Steps to make Mango Mania

  1. Dry roast the puffed rice for 2 minutes. Then make one string of jaggery syrup.
  2. Then add puffed rice in it and mix well immediately transfer into a circle shaped bowl like disc shape.
  3. Heat another pan add all the ingredients of sauce mix well then cook for 2 minutes, then keep aside.
  4. In a bowl pour wheat flour then add one by one all the ingredients make a batter like flowing consistency, heat a greased tawa pour one ladle of batter,then spread cashew nuts,raisins, mango cubes sizzling 1 tsp oil then flip it cook another side of pan cake.Make other pan cake like same way.
  5. Then assemble it. Firstly Take the Murmura base, then pour 2 tbsp of chutney then place the pancake. Again spread the chutney, then place another pancake.

    2. Decorate with chutney, cashew nut, raisins, mango cubes, coriander leaves and cherries.
