Truth is we're mostly a raw on the half-shell bunch (hence the disproportionate number of those to Rockefellers), but we have a couple of friends who just don't like raw ones, and we didn't want them left out of the oyster fun so we made a few dozen for them out of a caseful.
But as it turns out, all of us raw people who tried a couple of Rockefellers ended up thinking them quite good! (Which does not mean we are cooking all of our oysters anytime soon, but we will no longer cringe at the idea of cooked oysters. :P)
I used Kumiais this time - and they're about middle in terms of size - but you'll want to adjust your cook time to the size of your oysters. 6 to 8 minutes was just enough to plump and sweeten them up, which was the perfect cooked texture for me.
This topping mixture is for about 3 dozen oysters, but you can scale down 1:1 for one or two dozen. If you end up with extra topping, just sprinkle that on the broiler pan alongside the topped oysters, and you'll get some yummy crunchy bits to enjoy like a cheese and panko frico!

Ingredients and spices that need to be Take to make Oysters Rockefeller:
- 3 dozen oysters
- 4 Tablespoons unsalted butter
- 1 cup minced shallots
- 4 oz spinach leaves, chopped (about 6 cups)
- 1/2 cup finely chopped parsley (I use stems and all)
- 3/4 cup panko (Japanese bread crumbs)
- 2/3 cup grated Parmesan cheese
- 2 green onions, chopped
- Lemon wedges
Instructions to make Oysters Rockefeller
- Preheat oven to 450F.
In a medium pot or pan, melt butter over medium-high heat. When all butter is melted, saute shallots until translucent.

- Add spinach and parsley and keep sauteing until spinach is wilted.


- Add panko, Parmesan cheese, and green onions and stir and fold to thoroughly combine.



- While your mixture's cooling, shuck your oysters and set them on a foil lined broiler pan. I find the slots in the broiler pan help hold the oysters in place.

- Top each oyster with somewhere between 1 to 2 Tablespoons of topping, depending on size.

- Roast for 6 to 8 minutes until the topping is golden brown and the oysters have just plumped. (Forgot this pic! :D)
- Serve with lemon wedges - I highly recommend a good squeeze on each oyster - and enjoy!
