  1. The day prior, sprinkle your turkey with sea salt. Be sure to get it all over the bird, including the inside. Put the turkey uncovered in the fridge overnight, then pull it back out 1 hour prior to cooking.
  2. In a bowl, mix together the butter, olive oil, garlic powder, orange zest, Italian parsley, sage, and several grinds of freshly cracked black pepper. Use your hands if you have to, to ensure it's thoroughly blended.
  3. Carefully insert your fingers underneath the breast skin of the turkey. Try to clear a pocket in each breast half without tearing the skin. Make a golf ball sized ball out of the butter and insert it in one of the pockets. Massage the butter to spread it. Repeat for the other breast half. Massage the remaining butter over the rest of the bird.
  4. Preheat your oven to 325 F. Stuff the onion quarters, garlic halves, and bay leaves into the cavity of the bird and put it in the oven. Roast for 3 1/2 to 4 hours. If the skin starts to burn, lay a piece of aluminum foil loosely over the bird. Baste the turkey at about the 3 hour mark. Pull the turkey out once a thermometer reads 165 F in the thickest part of the thigh and breast. Let rest at least 1 hour before carving.
