Mixed veg uttapam recipe is one of the popular breakfast recipe which I prepare with left over Dosa batter & vegetables. However, i try to add finely chopped onions always and i think onions are a must in any uttapam recipe.
Kara chutney is the perfect side dish for any dosa or idly varieties 😋😋
Ingredients and spices that need to be Get to make Mixed Veg Uthappam with Kara Chutney:
- For Uthappam batter :
- 2 cup Idly rice
- 1/4 cup Raw rice
- 1/2 cup Urad dal
- 1/2 tsp Methi seeds
- For Kara Chutney:
- 2 sliced onion
- 1 tomato chopped
- 1 handful Mint & Coriander leaves
- Little tamarind
- 5 red chili
- 2 tsp urad dal
- 2 tsp chana dal
- 1 tsp cumin seeds
- 2 garlic clove
- 2 tsp oil
- Salt as per taste
- For Uthappam:
- 1/2 cup grated carrot
- 1 finely chopped onion & tomato
- 3 chopped green chili
- leaves Finely chopped curry leaves,coriander
- For Chutney tempering:
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp urad dal
- leaves Few curry
- 1/4 tsp asoefitida
Steps to make Mixed Veg Uthappam with Kara Chutney
- For the Utappam batter, soak all the ingredients over night/ 6 hrs. Then, Grind it in a grinder to smooth batter. Add salt and ferment it for 8 hrs or overnight.
- For chutney: Dry roast dal,red chili,cumin seeds and set aside. In the same pan, add 1 tbsp oil, onion, tomato, tamarind,2 garlic clove,salt and saute until it turns mushy. Then add the coriander, mint leaves, switch off the stove & close the lid. Let it cool down for 10 mins.



- Once it is cooled down completely, grind it to smooth paste using Mixie(Dont add more water). Transfer the chutney into a bowl. In a tadka pan,add 2 tbsp oil, all tempering ingredients and let it splutter well. Then add tempering into the chutney and mix well.


- Cut all the veggies required for Uthappam and set aside.
- For Uthappam, mix the fermented batter well. On a hot tawa, add 1 ladle full of batter and press it gently to thick dosa.(Dont make it thin like dosa) Uthappams should be thick.


- After a minute, sprinkle the veggie mixture all over the dosa. Be generous in adding onions for the uthappam to taste great. Gently press it with the dosa ladle or spatula.
Drizzle some ghee on sides, add some Idly podi(Optional). Once it is cooked on 1 side, flip it gently to other side and cook it on low flame for 1 min.
- Repeat the same for the remaining batter. Enjoy the tasty Veg Uthappam with spicy Kara chutney.
