- 7-8 baby brinjals
- 7-8 baby potatoes
- 1 cup finely chopped/paste onion
- 1 cup tomato puree
- 1 tbsp ginger garlic paste
- 2 tbsp oil
- Stuffing
- 1/2 cup peanut powder
- 3 tbsp besan
- As needed salt
- as needed coriander powder
- as per taste cumin
- as needed turmeric
- 1 tsp sugar (optional)
- as needed red chilli
- 1 tsp garam masala
- 1 tbsp red garlic chutney
- 1 tbsp oil
Steps to make Kathiyawadi Varaliyu
- Wash, peel and make slit in potatoes and brinjals. Mix all stuffing ingredients and stuff it in potatoes and brinjals.



- Steam this stuffed veggies for 15-20 minutes or until done. In a pan add oil. Once hot add cumin, asafoetida.



- Add onion paste and roast until nice brown.add tomato puree and spices. Cook until oil separates. Add sugar and 1-2 cup water.



- When gravy starts boiling add steamed veggies. Cook until gravy is thick. Enjoy this hot varaliyu with paratha or rotla..
