  4. Pour in the chicken stock and stir in the mustard. Lay in the thyme sprigs, then arrange the chicken on top of that, skin-side up. Cover, and let simmer for 20 minutes or until the chicken's fully cooked.
  5. Remove the chicken from the pan. Fish out and discard the thyme sprigs. Add the cream. Make a slurry by mixing the cornstarch with a few tbsp cold water, and swirl it into the pan. Let simmer and thicken for 1 or 2 minutes, then check the seasoning. Return the thighs to the pan once more so they can re-warm, then serve.
